AUBERGINE AND HAM APPETIZER

Ingredients (4 people):

- 2 aubergines

- 8 thin slices Serrano ham

- 8 slices Brie cheese

- olive oil

- salt

- Modena balsamic vinegar cream

Method: 

Wash the aubergines and cut into slices lengthways, sprinkle with salt and leave in a colander until they have released all their water. Then dry them with kitchen paper and cook on the griddle with a little olive oil. When the aubergine slices are cooked, arrange a slice of Argal Serrano ham and a slice of cheese over each one, roll them up and secure with a cocktail stick. Heat gently in the oven until the cheese has melted. Drizzle with olive oil and vinegar to taste.
