SPICY MACARONI WITH CHORIZO

Ingredients (4 people):

- macaroni (about 300 or 350 g)

- raw Argal chorizo cut into thin slices or cubes (about 100 or 150 g)

- 1 large onion, finely diced

- about 200 g of tomato flesh

- 1 green pepper, finely diced

- 1 chilli

- 1 leek

- olive oil, salt, herbs

Method: 

Prepare the ingredients for cooking and start by lightly frying the chorizo in a little oil. When slightly browned, remove and set aside. In the same oil, lightly fry the onion, then add the leek, the pepper and finally the tomato and the chilli. Add a pinch of sugar to offset the acidity of the tomato, a little salt and the herbs. Meanwhile, boil the pasta and set aside. Assemble the dish by first placing the pasta on the bottom of the dish, then add the vegetable mixture and finally the chorizo. Serve with a complete green salad for a balanced meal.
