TURKEY ROLLS WRAPPED IN SERRANO HAM WITH ORANGE SAUCE

Ingredients (for 4 people):

 

For the roll

- 8 turkey breast fillets

- 8-10 slices of Argal Serrano ham

- 10-15 prunes with stones removed

- a handful of pine nuts

- salt and pepper

- 1 thinly sliced orange with the skin left on

 

For the sauce:

- 4 dessert spoons of olive oil

- 1 medium onion

- 4 carrots

- 1 clove of garlic

- a small knob of butter

- half a glass of white wine

- a glass of fresh orange juice

- salt and pepper

Method: 

Lay out a sheet of cling film, then place a couple of slices of Argal Serrano ham on top, followed by a turkey breast fillet, then place a few prunes and pine nuts in the middle and season. Now roll up the whole thing with the help of the cling film and secure with cooking string if the roll does not look tight enough. Repeat until you have one or two rolls per person, depending on how big they are, and set aside.

To make the sauce, pour some olive oil into a frying pan and lightly fry the onion with the carrot and garlic. Next add the butter, the wine and the orange juice, allow to reduce and check the seasoning. When the mixture is cooked, place in the food processor and whizz until you obtain a smooth sauce. In a frying pan with a little oil, fry the rolls on all sides until browned. Complete the cooking process in the oven with a slice of orange on each roll. Serve the roll with the sauce and some plain rice.
